Cold days swooshing your way down the mountain beg for a mid-day stop for a steaming bowl of hot soup. Of course, the chefs at Deer Valley Resort readily remedy these cravings with daily specials of spoonable meals like Tomato with White Bean and Kale Soup, Roast Sirloin with Sun Dried Tomato and let us not forget the world-famous Turkey Chili.

My daughter would NEVER let me forget the world-famous Turkey Chili. It’s like oxygen for her.

And yet somehow, soups at Deer Valley just got better with the introduction of the new Bald Mountain Pho at Silver Lake Lodge. If you haven’t tried it yet, it’s high time you raised your chopsticks and spooned your way through a bowl or two.

My husband and I find ourselves on weekly lunch dates for Japanese ramen and Udon, Korean ramen, and you guessed it, Vietnamese Pho.

So after learning the chefs at Deer Valley would be offering bowls of genuine Pho right smack dab on the mountain, Silver Lake Lodge was our first stop on our first ski day of the year.

Unfortunately, that first day we got a late start and headed up for a half day. We made a few runs and then made our way to the lodge only to be told the Pho service ended at 2:30 p.m. Make note pho lovers.

But that just gave us another excuse to get our helmeted heads over to the lodge on our next ski day the next weekend.

The pho comes with options for two different flavors of broth: a rich beef broth or a ginger mushroom broth. My husband and I chose the beef broth while my vegetarian friend chose the ginger mushroom.

However, after dining that day I received intel that a mix of the two broths is the way to go. I’m always a fan of mixing and matching so I’m totally going to be giving that a try.

The next choice up for debate is between thinly sliced Wagyu beef or tofu and shiitake mushrooms. I chose the beef (Wagyu! Hello delish!) but next time I may be begging for both.

Like traditional pho, the soup is loaded with rice noodles, bean sprouts, lime wedges, sliced jalapeños, fresh Thai basil and mint. All the fixins’ for serious flavor.

I’m always doctoring up my soups so I more than welcomed the house made hoisin, fiery Sriracha and hot red chile oil to add even more spice to my ever-flowing noodle bowl.

The heat just gave me yet another reason to say “okay” to a cold beer and carrot cake to mellow out the fiery flavors we so happily slurped away.
